How can Operating systems total visitors be different from Browsers total visitors ?

Total hits are the same for both Browsers and Operating systems.
Total visitors are differents.

Some visitors may request a site using multiple browsers but one OS. In this case they will be counted in several rows in the Browsers table that increases the number of total visitors shown in this table.
